Let’s be fair. There’s good and bad.

The place is big and the tables are clean. The staff is pleasant. There were plenty of habachi tables and it looked like they could put on a fun show there.

That being said…
We had sushi and sake there. The many bottles of our sake were available only hot – and the waitress said she didnt know how to prepare it cold. C’mon, have some confidence in your sake! guess not…

The sushi station smelled like cleaned days old fish. The taste was not as affluent as I would like and the texture seemed treated. The rolls are better than the sashimi, you can thank the rice for masking some taste. Wasabi was Incredible Hulk green.

I may be acting harsh on Fuji San. This IS Binghamton sushi. Plus, I have been stepping up my sushi game in NYC, how can I compare? Where is the nearest fish market?

Doesn’t matter. I won’t treat Binghamton with kid gloves. There is plenty of fine eating in Bingobango – places that can compete and beat the best in any big city.

If you want sushi in Binghamton… good luck. I’ll watch from afar.
